Surmai Fry

Marinade:

Marinate the slices in 2 tbsps Red chilli powder, 1 tsp garam masala powder, 1/2 Tsp turmeric powder, 1 tsp coriander powder, 1 tsp ginger-garlic paste, a small bunch of chopped fresh coriander leaves, few chopped curry leaves, 2 tbsp vegetable oil, juice of half a lemon and salt as per taste.

Leave the marinade for 1 hour.

Frying:
Fry the marinated slices in hot oil; one to 2 minutes each side. Be careful not to burn.

Serve hot with curry and rice or appams or as a starter with a generous squirt of lime.
